TASTING NOTES
Appearance: Intense, brilliant golden yellow.
Nose: Citrics and fenel with a base of white fruits.
Palate: Fresh, frank and acid entry, volume and creamy texture with a soft elegant finish.
ELABORATION
Hand picked and selected. Fermentation at low temperatures to preserve the aromas typical of the variety. Batonage with the settled lees for one month in stainless steel deposits, giving it a good structure and base for its long ageing (12 months) in 300 litre barrels of acacia wood or French oak (fine grain and semi-toasted). Bottled and stacked in order to refine within the bottle.
CONSERVATION
Bottles stored horizontally, protected from the light and draughts and a temperature not exceeding 20ºC.
RECOMMENDATIONS
Best served in fine crystal tulip glasses with a wide opening between 6º and 8ºC.
